Baked Fish with Lime

Ingredients

  • 2lb-3lbs white fish fillets, such as cod or halibut

  • 1 lime – halved

  • 3tbsp extra virgin olive oil

  • 1 large onion – finely chopped

  • 3 garlic cloves – finely chopped

  • 6-8 tbsp chopped fresh coriander

  • Freshly ground black pepper and herbs of your choice

  • Lemon and lime wedges to serve

Directions

  1. Place the fish fillets in a bowl and sprinkle with herbs and pepper.

  2. Squeeze the juice from the lime over the fish.

  3. Heat the olive oil in a frying pan. Add the onion and garlic and cook for about 2 minutes, stirring frequently, until softened. Remove from heat.

  4. Place a third of the onion mixture and a little of the coriander in the bottom of a shallow ovenproof dish or roasting tin. Arrange the fish on top. Top with the remaining onion mixture and coriander.

  5. Bake in a pre-heated oven at 350F for 15-20 minutes or until the fish has become slightly opaque and firm to the touch.

  6. Serve immediately with lemon and lime wedges for squeezing over the fish.
