Heavenly Puff Cookies

Ingredients

  • 1 cup margarine

  • 1 cup sugar substitute

  • 2 eggs

  • 2 3/4 cups flour

  • 2 teaspoons cream of tartar

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt substitute

  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon sugar substitute

Directions

  2. Place the margarine, 1 cup sugar substitute, and eggs in a large bowl. Beat well. Mixture will be light and fluffy.

  3. In a medium sized bowl combine the flour, cream of tartar, baking soda and salt substitute. Mix well. Add this mixture to the light and fluffy mixture in the large bowl. Blend well. Cover the large bowl and place in the fridge for an hour.

  4. Remove bowl from fridge. Preheat the oven to 375 degrees. In a small bowl, mix the cinnamon plus 1/4 teaspoon sugar substitute. Mix well. Shape the dough in the large bowl into balls 2" in diameter. Roll in the cinnamon and sugar mixture. Place the balls 3" apart on an ungreased baking sheet. Bake the cookies 12 to 15 minutes until golden brown.

  5. YIELDS 35 COOKIES.

Great cookies however, my cookie jar will not keep her lid on. Everyone likes these cookies, they are low-cal. For children & everyone likes these cookies. Consider making double the recipe.
